The millstone is a round tool, made of extremely hard stone, that has been used since the Middle Ages for grinding cereals, spices, legumes or for processing olives. In the first case, two stone disks of variable size, on average from 60 to 120 cm, are positioned one above the other. The first remains stationary and is called dormant while the second positioned above, called active, rotates crushing the product introduced between the two stones through the hole in the centre. For olive processing, the millstone is positioned vertically and rotates around a circular slot.
